I will compensate fairly, would like to have it done within a month or so if possible (April 2021), so not in a super rush.

It won’t have monitors so it will be a little lighter than usual.

I don't want to rain on your parade,
but transporting twin racing cabs will require a trailer or small cube van.

It won't fit in even the largest mini-van ( I have a Dogde Grand Caravan )
(... I know of what I speak, because I've done it myself... ;-).

The monitor section will usually stand about 5" tall,
so unless you can separate the monitor section from the base ,
you will need something with a higher-than-average clearance .

Your best/cheapest option is to find a friend with a class-2 hitch vehicle (pick-up truck, larger SUV ),
and rent yourself a covered U-haul trailer.

Solid suggestions, I'll add I wouldn't even try to separate the monitor section, especially if everything is working nicely right now..

but more advice: measure measure measure! check the manual of the game (which one is it?) the dimension (and weight!) will be in there.

Don't look at the weight, .... it might change your mind ! ;-)

If I had known that EACH Daytona cab was 600 lbs (...yes, that's 1200lbs for the pair !!! ),
I might never have gone through with it ! ;-)
